The curds are popping up all over – in deli shops, specialty stores, and recently in grocery stores. Their flavor is mild, but can differ in taste depending on the process in which it was made. It has about the same firmness and density as cheese, but with a springy or rubbery texture. Fresh curds squeak against the teeth when bitten into, a defining characteristic due to air trapped inside the porous material. So these curds are often known as squeaky cheese.
I don’t know if it’s because they squeak, because they’re a relatively “new” phenomenon to most of us, or if they simply have a great flavor (people I know who’ve tried them rave about them), but there’s no denying they’ve become a mainstream food item, most often enjoyed as a snack.
Some curds are flavored with herbs and spices, or dipped in batter and deep-fried. Here at Kitchen Kettle Village in our new Aged & Cured, we have a variety of luxury cheese curd flavors.
