With picnics and potlucks callin’ it’s time to whip out those trusty recipes. With two family reunions on the books for the month of July I have decided to pull out the one and only No-Bake Strawberry Pie recipe. This recipe has been used by my Mom, Aunts and Grandmother. It is simple. It is delicious and it is prefect for this sizzling summer season! I will also be including a no bake homemade pie crust recipe! Take a look below…I hope you enjoy!
No-Bake Strawberry Pie
1 small package strawberry jello
1/2 cup sugar
1 tbsp. fresh lemon juice
2 tbsp. corn starch
1 1/2 cup cold water
1 1/2 pints strawberries (generous)
Combine Jello, sugar and cornstarch. Add cold water and mix thoroughly. Heat to boiling until mixture coats spoon and reaches a clear consistency. Stirring constantly. Remove from heat. Cool and add lemon juice. Mix with sliced berries and pour into baked pie shell. Refrigerate until congealed. I like to let my pie sit in the fridge for at least 7-8 hours, just to make sure it is set. Top with some homemade whipped (1 cup heavy cream, 1/4 cup sugar, 1 tsp. vanilla. Whip cream until almost stiff. Add sugar and vanilla; beat until cream holds peaks) and blueberries!
Easy Oil Pie Crust
1 cup flour
1/2 tsp salt
1/4 cup olive oil
2 tbsp. cold water
Mix flour and salt with wire whisk. Stir in oil until mixed. Add water or milk until mixed completely. Place dough into middle of 8 or 9-inch pie plate. Spread dough out with hands covering the bottom of the plate and up the sides and over the rim. Bake for 20-30 minutes until golden brown.
