An Award Winning Rhubarb Dessert Recipe

In celebration of our upcoming 34th Annual Rhubarb Festival taking place in the Village on May 19th and 20th, its only right we share a recipe with rhubarb in it.

Here in the heart of Pennsylvania Dutch Country, rhubarb is used in many unique and local recipes. From rhubarb sauces, dips, pies to even drinks, it is a special ingredient that delights many of our guests every year.

Our featured recipe is a delectable strawberry rhubarb cheese pie that is too good to not share. So, give this recipe a chance to enlighten your appetite!

Strawberry Rhubarb Cheese Pie

INGREDIENTS:

  • 1 (9-inch) unbaked pie shell
  • 1 cup sugar
  • 2 tablespoons butter
  • 2 eggs
    Strawberry Rhubarb Cheese Pie
  • ¼ teaspoon salt
  • 3 tablespoons cornstarch
  • ½ teaspoon almond extract
  • 4 ounces cream cheese (softened)
  • 3 cups fresh rhubarb, sliced
  • 1 cup fresh strawberries, sliced

Crumb Topping:

  • ½ cup brown sugar
  • ¼ cup flour
  • 2 tablespoons butter
  • ½ cup chopped pecans 

INSTRUCTIONS:

To make crumb topping:

  1. Mix brown sugar, flour, butter and pecans together until crumbly, and set aside.

To make pie:

  1. Preheat oven to 425°.
  2. Pre-bake pie shell for 5 minutes
  3. Cream together sugar, butter and eggs, stirring for 2 minutes.
  4. Add salt, cornstarch, almond extract and cream cheese.
  5. Blend just until smooth.
  6. Fold in rhubarb and strawberries.
  7. Pour mixture into pre-baked pie shell.
  8. Cover to edges with crumb topping mixture.
  9. Bake at 425° for 15 minutes, then reduce temperature to 375° and bake for 40-45 minutes.
  10. Remove from oven and let cool.
  11. Refrigerate before serving.
